Juan, (@jp_thecook) a chef based in the Palms neighborhood, bakes sourdough bread weekly from a home. Intrigued by the lingering smell of freshly baked bread from a few houses down, I spoke with Juan and asked if I could document his baking process (I find sourdough an other-worldly subject). He demystified the complexities of running a bakery (@jpbakeryla) through laborious prep and meticulous timing. He made it so simple though. He showed me his prized kitchen possessions - his Rofco oven and the bread basket linens that his mom made in Argentina.
