Making pandan and coconut cheesecake with @kirthanaa for Kitchen Chronicles edition 056. ~ Meet Kirthanaa, and her perfect pandan cake. It’s a basque cheesecake, with grassy and fragrant pandan swirled through the batter. With the addition of sweet coconut, it’s no wonder Kirthanaa’s cake has completely taken off, and she’s now baking it for cake lovers all over London. ~ Kirthanaa was born and raised in Malaysia, having moved to the UK for schooling. Many of her new friends were yet to experience Malaysian food, so she’d cook classic dishes to showcase what they were missing out on. One of the flavours she’d often introduce was pandan. ~ “I’ve always wanted to do charity supper clubs with Malaysian food,” Kirthanaa shares, “as I’ve been cooking with my mum since I was twelve.” Then, during the pandemic, “I did an online pastry school, PUFF the Bakery, and started posting images because of that.” After a while she started posting her own food, as well as table scaping, and people took a real liking to it! ~ Many of the dishes that Kirthanaa cooks are Malaysian-inspired, and since moving to the UK, she’s hosted many Malaysian-cuisine supper clubs. “In Malaysia, everything you do is centred around food,” she shares as she slices the pandan cheesecake, “from when you wake up to when you sleep – it’s all about family and feast.” Kirthanaa’s mission is to keep exposing the amazing flavours of her culture.
