Reset Routine= Sleep 🛌 + Movement 🏃🏻‍♀️ + Nutrition 🍳 Mushroom & Squash Frittata Ingredients 🌱3/4 cup chopped mushroom 🌱1/4 cup chopped onion 🌱1/2 cup squash 🌱minced garlic (3 cloves) 🌱1 Tbsp avocado oil 🌱salt to taste 🌱1 tsp paprika (adjust to spice preference) 🌱1/2 tsp crushed red pepper 🌱12 eggs 🌱1/2 cup fresh parsley Recipe 1. Preheat your oven to 400 degrees F 2. Chop and prepare veggies 3. Heat avocado oil (medium high heat) in a cast iron or oven safe pan 4. Add in garlic and sauté until aromatic 5. Mix in onion, squash and mushroom 6. Add salt, paprika, crushed red pepper and 1/2 portion of parsley. 7. Sauté veggies until they’re cooked and turn off stove. Remove pan from stove and let veggies cook for 5-10 mins 8. In another mixing bowl whisk together eggs, feta cheese, and 1⁄2 teaspoon salt. 9. Pour egg mixture over vegetables in skillet and mix in egg. 10. Bake for 15-20 mins. Turn off oven and let skillet sit in the oven for another 10 mins 11. Remove from oven and top with fresh parsley.
