Rice & Flesh (c.1390) Almond, saffron, veal sweetbreads & smoked eel This dish is inspired from 1390, it is one of the oldest recipes on our menu. It was originally found on a scroll written for King Richard II. The forme of Cury, is the oldest known cookery book in England. This is where the history of British cuisine really begins. The scroll was written in late Middle English (c. 1390) on vellum and contains about 200 recipes from the courts of Richard II. Vellum is a high-quality form of parchment. Like parchment, the skin is prepared to take writing in ink. It was one of the standard writing surfaces used in Europe before paper became available. For high-status documents. The author states that the recipes are intended to teach a cook to make every day dishes (Common pottages and common meats for the household, as they should be made, craftily and wholesomely), as well as unusually spiced and spectacular dishes for banquets ('curious potages and metes and sotiltees for alle maner of States bothe hye and lowe.) ______________________________________________________________________________๐Ÿ‘‘ ๐Ÿ“œ #hestonblumenthal #dinnerbyheston #dinnerbyhestonblumenthal #dinnerbyhestonlondon #dbhb #michelin #michelinstar #michelinguide #michelinstarchef #michelinrestaurant #50bestrestaurants #worlds50best #worlds50bestrestaurants #londonlife #londonfood #londonrestaurants #londonfoodie #londoncity #londonfoodguide #londonfoodscene #london๐Ÿ‡ฌ๐Ÿ‡ง #cheflife #chefsofinstagram #chefsofinsta #foodiesofinstagram #foodstagram #foodart #foodstylingandphotography #storytelling #foodphotography ********************************* Photography by @dimitri.andreas.photography
