Kabocha squash chili - very much inspired when I saw @ballerinafarm pumpkin chili last week, and so perfect for my meal prep this week. This chili is packed with veggies, hearty from the 2 different types of beans, and just a tad sweet and velvety from the squash. I steam the kabocha squash for 15 minutes before cutting it, because it makes the process much easier, but feel free to also substitute pre-cubed butternut squash if you want to save a step.
