Kabocha squash chili - very much inspired when I saw @ballerinafarm pumpkin chili last week, and so perfect for my meal prep this week. This chili is packed with veggies, hearty from the 2 different types of beans, and just a tad sweet and velvety from the squash.
I steam the kabocha squash for 15 minutes before cutting it, because it makes the process much easier, but feel free to also substitute pre-cubed butternut squash if you want to save a step.

1/2 kabocha squash, about 2 cups diced
1 large yellow onion
1 lb ground beef
Kosher salt
Black pepper
2 carrots, chopped
3 cloves garlic
2 zucchini, diced
1 can kidney beans
1 can cannelloni beans
28 ounce can crushed tomatoes
2 cups chicken broth
1 tablespoon dried oregano
1 teaspoon cocoa powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 teaspoon chili powder
1 tablespoon neutral oil
