Fridge leftovers panzanella Got back from a wedding weekend (woo @cmoffett93 !!) and needed a late night dinner…. Had some beets, a red onion, frozen bread butts, and a tomato that had seen better days and came up with this panzanella. Made a tomato vinaigrette, toasted up the bread into croutons, and let the red onion macerate for about 15 minutes before mixing it all together with a can of chickpeas. @madewithlovebyro always says the best kitchen creations come from being creative with what you have.
