Tiramisu, layered with lady fingers soaked with cognac and strong espresso, whipped mascarpone, dusting of cocoa powder. Finished with lemon thyme chantilly cream, maldon, and fresh lemon thyme sprigs from the garden, topped with a blackberry. I like my tiramisu bitter, heavy on the espresso and cognac, and a bit salty.
