Porchetta... juicy, succulent & delicious pork belly with irresistibly crispy, crackling skin. Flavoured with plenty of fresh herbs, toasted and ground fennel seed, citrus, and lots of gahhhhlic. Left to marinate overnight before being roasted to perfection on the @Traeger Grills Timberline XL with cherry wood pellets and a @meatermade probe to keep track of internal and ambient temperatures. Served here with some roasted Parisienne potatoes and sautéed garlicky rapini to cut through the richness of the pork – also cooked on the Traeger. This is one of my absolute favourite holiday meals and makes for some incredible leftovers.
