So thrilled to be handcrafting fine plant milk cheeses again — just for fun. It’s been 8 years since I played around with mold ripened cheeses, and I’ve found new milks from interesting seeds that form curds then turn into a lovely consistency, especially for the marvelously “stinky” cheese that has a rich, unctuous quality despite the fact there are no added oils.
