NEW COFFEE Don Eli Reposado, Costa Rica Don Eli has pushed the boundaries of how a wet mill can work in Costa Rica, producing some of the best coffees in Costa Rica since 2014. The wet mill also acts a central point for education and training for the local coffee community, and Jacob Montero is allowed to experiment and perfect new processing methods, resulting in a 6th place in this years CoE. This particular lot goes through a ‘Reposado’ or ‘Resting’ period before being processed, where the freshly picked cherries are left in tanks to experience a controlled fermentation before drying. This has pushed the vibrancy and flavor intensity in the cup, resulting in an incredibly complex but clean profile.
