Fflampayne (c.1390) Strawberries, vanilla cream, lemon verbena & strawberry sorbet. A recipe for Fflampayne can be found in The Forme of Cury - a collection of parchment scrolls made of calfskin with recipes written by the Master Cooks of King Richard II. The original recipe is in the form of a pork pie dish. Fflampaynes came to be decorated with a little triangle, or ‘flames’ of pastry sticking out of the top to look like the tart was burning with fire.
