Thin layers of crispy filo pastry wrap around a filling made with courgettes, a mix of feta and cheddar cheese, alongside fresh herbs and lemon zest. This pie is pretty quick to assemble but for a more delicate version, try making small rolls or triangles; they are the perfect finger food.
