I’m calling this “my everything but the bagel bowl”. It’s got soft scrambled eggs made with @peteandgerrys organic eggs, lox, burrata, pickled red onions, dill, chives, and a scoop of tobiko (a.k.a budget caviar). [ad]⁣ ⁣ Bagels are fun to style and all but sometimes it’s hard to balance all the things I want to put on them (especially with the hole in the middle!) and even if I manage to pile it all on, it’s a very short victory when it just goes tumbling off as I try to take a bite. So I thought, why not just throw all my favorite bagel accompaniments into a yummy breakfast bowl? ⁣ ⁣ One major swap I made to bagel classics was the burrata because as much as I love cream cheese, having big globs of it in this bowl felt unseemly, whereas we all know that burrata brings that creamy cheese component in a form that is very suitable to bowl food. I also don’t typically eat smoked salmon and scrambled eggs in the same bagel but they obviously tasted amazing together and there are no rules here when it comes to throwing favorite things into a bowl. ⁣ ⁣ When making very soft, barely-done scrambled eggs like this, though, I do recommend using high-quality eggs! My go-to when I’m making eggs like this or anything with a runny yolk are @peteandgerrys organic eggs; they come from small family farms dedicated to the humane treatment of hens to produce healthy eggs, free of synthetic pesticides, antibiotics, or hormones. #BelieveInWhatYouBuy⁣ ⁣ I ended up enjoying this bowl by alternating between spooning flavorsome scoops onto a toasted everything bagel and just digging in directly!
