This easy spiced apple and raisin compote is great on porridge, pancakes, French toast, yogurt or as a crumble filling.
It's warm and comforting for autumn, and great to celebrate the UK apple season and to make when you have a glut of apples from a tree in the garden, or to use up apples that are past their best.
You'll need (serves 4 - scale up if you have lots of apples to get through):
700g diced apples
50g raisins (optional)
20g brown sugar or caster sugar
2 tsp all spice or ground cinnamon
Step 1
Peel, core and dice the apples.
Step 2
Combine all the ingredients in a saucepan over a medium heat.
Step 3
Bring the mixture to the boil, stir and reduce heat to low. Cover and let it cook for 12-15 minutes, stirring regularly, until the apples and raisins are softened and the liquid has almost all cooked off.
Step 4
Remove from the heat and enjoy straight away or keep in the fridge up to 5 days.
