The courgette season is coming to an end so we are making the most of them whilst they are at their peak.
Courgettes go well with so many ingredients you should never have to eat them the same way twice.
Try with:
Cheese (Feta, Goat's cheese, Halloumi, Mozzarella, Ricotta)
Herbs (Basil, Coriander, Dill, Mint)
Mediterranean flavours (Capers, Garlic, Olives, Pine nuts)
Mediterranean veg (Aubergine, Peppers, Red onion)
Peppery leaves (Mustard leaves, Watercress, Rocket)
Pork (Especially bacon and pancetta)
Here we have paired with lemon, mint and pangritata- a crispy, garlic crumb.
