The heart of Wasenhaus beats through its founders, Alexander Götze and Christoph Wolber, two winemakers whose paths were forged within the hallowed vineyards of Burgundy. Both spent years honing their craft at some of the most respected estates in the region - Domaine Leflaive, Domaine Comte des Armand, and Domaine de Montille. They quickly learned the art of making wines that express not just the grape but the land itself. Having a deep respect for the terroir of their homeland, they returned to Germany bringing a piece of Burgundy’s soul to Baden. As connection to the land was paramount, they chose to setup shop in the soils near Staufen where the cool winds of the Black Forest intersects with the warm sun of the Alsatian border. In the cellar they practice minimal intervention, letting nature guide the fermentation and ensuring their wines are as pure and expressive as possible. The vision for Wasenhaus isn’t just to create excellent wines, but wines that capture the essence of a place and a moment in time all while respecting the old-world traditions they learned in Burgundy. Wasenhaus’s Spätburgunder is 100% Pinot Noir made from hand-harvested grapes grown on old-vine parcels in the Staufen area. The vines, some over 100 years old are prized for their low yields and deep roots which result in highly concentrated intensely flavorful berries. The cool climate of the region helps preserve the grapes’ acidity and freshness while also allowing for a slower more even ripening that adds complexity and depth to the fruit. Whole cluster fermantation encourages a delicate extraction of flavors and tannins, leading to a wine that is both refined and expressive. This method brings out the bright red fruit like ripe raspberries, cherries, and cranberries alongside earthy mushroom, licorice, and a touch of baking spice. The result is a wine with silky tannins, vibrant acidity, and a beautiful balance between fruit intensity and elegance.
