I’m not usually a big fan of fine dining, but I recently tried etcha and it completely won me over. The chef, Giacomo Primante, is an Italian who has worked at 3-Michelin-star restaurants across Europe and the US. What’s amazing is that after moving to Thailand, he spent over a year traveling the country from north to south just to source the best local ingredients and turn them into something fresh and unexpected, yet still deeply rooted in Thai flavors. Every dish was surprising but delicious. Like... chocolate and wasabi?! Sounds weird, but it totally works. Everyone at the table confirmed the wine pairing was spot on (I don’t drink, but the mocktails were amazing too). And the service? Absolutely top notch genuine and thoughtful.
