Spiced Tahini fish with Cilantro and Pistachio.
Cooking out of one of my favourite sources for delicious recipes, Milk Street, this recipe is based on a Lebanese dish Samke Harra, which traditionally is a whole baked fish.
200g fillets of river sole are brushed, both sides, with a sauce consisting of tahini, garlic, ground coriander, honey, chili flakes and chopped coriander stems. The fillets are grilled under the broiler for five minutes before being removed, topped with chopped cilantro and toasted pistachio. Extra Tahini sauce on the side with plenty of lemon juice.
A superb, delicate, nutty dish with firm yet perfectly cooked juicy meaty fish. So good.
