A fixture of every delicious Rosh Hashanah gathering are the symbolic foods of the holiday: apples dipped in honey to represent our wishes for a sweet year. This Apples and Honey and Brie board I put together with kosher ingredients at @metroontario is a wonderful way to integrate the special duo into a tasty appetizer offering — perfect for a post-shul lunch. I also included pomegranates, which are a very meaningful fruit in Jewish culture, on both the board and as garnish on the honey baked brie. ROSH HASHANAH APPLES, HONEY AND BRIE BOARD 1 granny smith apple, thinly sliced 1 red delicious apple, thinly sliced 1 ambrosia apple, thinly sliced 1 whole pomegranate 1 cup of dates 1 cup of honey + 1 tbsp 2 sprigs of rosemary 1 small wheel of brie cheese 1 piece of gouda cheese 1 piece of parmesan cheese 2 varieties of crackers 1. Preheat oven to 350. 2. Spread 1 tbsp of honey on top of a wheel of brie cheese and bake in a round oven safe dish for 5-8 minutes until it softens. 3. While brie bakes, cut your pomegranate in half. Cut a wedge off one half and remove seeds until you have 2 tbsp worth. Reserve the big pieces for your board. 4. Remove the brie from the oven and sprinkle 2 tbsp of pomegranate seeds and 1 sprig of rosemary. 5. Serve with a variety of crackers and a couple other firm cheeses, such as gouda and parmesan. Include different varieties of sliced apples, dates, pomegranate and a bowl of honey for dipping.
