Cabernet Poached Pears 🍐🍷🍇
#ad #21+ As we move deep into fall, and head toward the holidays, our palates tend to crave a rich, full bodied experience. The sweet spiced flavor of Robert Mondavi Private Selection Bourbon Barrel-Aged Cabernet Sauvignon is a perfect pairing for the juicy Anjou pear. The wine adds a complexity of flavor from the porous oak wood barrels and this recipe is sure to be a hit at your next gathering.
3 cups wine
1/4 cup sugar
1 orange, juiced
1 Tsp orange zest or peel
1 Tsp cloves
1 Tsp Star anise
Dehydrated orange, optional
2 sticks cinnamon
Cinnamon sugar and whipped cream for plating
4-6 firm, ripe pears (avoid Bartlett)
In a 4-quart saucepan, combine wine, sugar, orange juice, zest, and all spices. Bring to a boil, reduce heat and simmer for 5 minutes. While liquid is simmering, peel pears with a vegetable peeler, leaving stem intact and take care not to blemish the flesh of the pears. Gently place pears in poaching liquid, cover, and simmer for up to 30 minutes, turning every 5 minutes to ensure even color, until pears are cooked but still firm using a toothpick to check. Remove saucepan from flame, uncover and cool. Once cool, cover and chill in refrigerator up to 24 hours, turning occasionally, if desired. Gently remove pears from liquid. Meanwhile, reduce liquid over a medium high flame for 15 minutes, until liquid is thicker and resembles a syrup. Remove from flame and let liquid come to room temperature. Drizzle each pear syrup and serve.
