Why you’ll never see me recommend a ceramic nonstick pan. Comment “pan” and I’ll send you links to ones I do recommend. Ceramic nonstick cookware is often marketed as “nontoxic,” but that doesn’t automatically mean it’s inert or well studied for long-term daily use.
Most ceramic nonstick pans use sol-gel coatings made from silica combined with proprietary organic binders. Over time and with heat and wear, these coatings can degrade, shed particles, and lose performance. While this does not mean ceramic cookware is inherently dangerous, it does mean there are real gaps in transparency and long-term exposure data that consumers should be aware of.
Uncoated materials like stainless steel, cast iron, and carbon steel don’t rely on surface coatings at all. Their chemistry is stable at cooking temperatures, their wear products are well understood, and their risk profile has been evaluated over decades.
