The Happiest Food on Earth? I had the opportunity to make illustrations for a new @eater article about how fried chicken and a whitewashed version of American history became staples of amusement parks in the United States. Written by Amy McCarthy and featuring excerpts from conversations with Amethyst Ganaway, Dr. Psyche Williams-Forson, & Carlye Wisel, the piece explores the history of fried chicken, from its roots in the cuisines of enslaved African and African American people, its mass popularization & commercialization in the post-World War era, and its subsequent use in theme parks in association with ahistoric depictions of the turn of the century South and Westward Expansion, depictions aimed directly at white park-goers.
