Fire, foraging, and local produce: these are the keys to a meal by Negro Piattoni and Gavin Runzel aka The Modestos. Riffing on traditional Argentine-style methods of open-fire cooking, the chef duo builds rustic cooking structures out of branches and other materials gathered on site, upon which they slow roast whole ingredients, including both plants and animals.
