My first cookout from a @cheftomkerridge recipe. Turkey (chicken) meatballs in roasted pepper sauce from his Loose Weight & Get Fit book. Thanks to @ronckenjoy for highlighting the chef.
The meatballs are conventional enough, simply seasoned with dried oregano and garlic and instead of cooking them in the oven, I preferred to color them on the stove.
The magic lies in the sauce. Onion, garlic, tomato paste, smoked and sweet paprikas along with charred and roasted peppers are cooked for a bit before adding stock. Once done, the sauce is transferred to a blender to make a smooth purée, which went back to the stove. A couple of finely chopped courgettes went in next, followed by the meatballs, cream and a handful of basil and cooked till done.
There are times when, on first reading, a recipe sounds unexceptional. Here, It's the combination of simple ingredients that work so well. Earthy oregano, smoked paprika, charred peppers, roasted chicken and basil provide a delicious flavour foundation. The chopped courgettes provided a lovely bite and texture to the sauce.
One of the best chicken meatball recipies I've cooked in a while. In quite a while. Served with a side of cauliflower rice.
