Who doesn’t love chocolate!?!?
Okay well, I personally don’t love chocolate, but most do. 🙃
Dry Ingredients
🍩 1 1/4 cup AP flour
🍩 1/3 cup unsweetened cocoa powder
🍩 1 tsp baking powder
Wet Ingredients
🍩 2 tbsp melted butter, coconut oil or vegetable oil
🍩 pure maple syrup
🍩 1 tsp vanilla extract
🍩 1 egg
🍩 1/2 cup milk of choice
🍩 1 ripe mashed banana or 1/4 cup apple sauce
Add Ins
🍩 1 cup shredded zucchini
🍩 1/2 cup chocolate chips, optional
🥒 Add all wet ingredients in a bowl and mix well.
🥒 Mix in dry ingredients.
🥒 Fold in add ins and cook in your favorite donut maker! Or bake as muffins.
🥒 Enjoy!
Now the goal here isn’t to gain all the nutrients from zucchini through these donuts. Because well...you’d have to eat quite a lot of donuts to get a good amount of zucchini in you. With that being said, use this recipe to help teach your anti-zucchini child two things. First off, you can serve it in so many different ways and just because the last 20 zucchini recipes made you feel 🤢, doesn’t mean there might not be a zucchini recipe out there that will make you 🤤! Secondly, let them help you make these donuts to get exposure to zucchini. Let them touch it, feel it, and maybe they’ll even taste it! And who knows, maybe they’ll decide they even like it. 😍
*Note: cocoa powder contains caffeine so generally not advised for younger babies and toddlers. We are an all in moderation family. So when big brother and parents have some, little Emma also gets to try. Do what you feel is best and appropriate for you kiddos 😉
