Crockpot Burrito Bowls Makes 5 bowls Ingredients Chicken & Rice - 2 lbs chicken breasts - 1 cup salsa - 1 can black beans, drained and rinsed - 1 1/2 cups frozen corn - 1 chopped onion - 1 packet taco seasoning - 1 1/2 cups chicken broth - 1 1/4 cups uncooked jasmine rice Toppings - 1 1/2 cups shredded cheddar or Mexican blend - 1 to 2 limes, cut into wedges - Cilantro, chopped - Sour cream Instructions 1. Add chicken, salsa, black beans, corn, chopped onion, taco seasoning, and broth to crockpot. 2. Cook on low 6 to 7 hours or high 3 to 4 hours. 3. Shred chicken in the crockpot. 4. Stir in rice and cook 30 to 40 minutes, until rice is tender. (I added rice earlier in recipe but feel it’s best to add later because it can get soggy if added in too soon ) 5. Serve with cheese, cilantro, lime, and sour cream.
