Skyler’s birthday was awesome ❤️ Travis cooked an amazing dinner and I made desserts. The cake is so good I wrote out the recipe so Davis could make the next day. Skyler requested the lemon tart and coconut rice pudding. I used my faithful Malibu lemon tart recipe😍 I’m posting the recipes so they always have them...Dump it chocolate cake Preheat oven 375. Prepare well greased cake pan 2 c sugar 4 ounces unsweetened chocolate 1 stick butter 1 c water -Mix these together in a large pot until they melt together. Let cool 1 c milk 1 t vanillai 1 t apple cider vinegar 2 eggs -Mix these together in a measuring cup 2 c flour 1 t baking powder 2 t baking soda 1 t salt -Mix these together in a bowl In the cooled down pot slowly add the milk mixture. Mix well Then add the flour mixture. Best is to sift it into the pot. Mix together well. Pour into cake pan. Bake for 20-30 min depending on pan and oven. Insert knife and if it’s clean- It’s done Frosting In a double boiler melt 1 cup of chocolate chips Until smooth Take off the heat and mix in 1 cup of sour cream A little at a time Frost cake once the cake has cooled. Coconut Rice Pudding 1 can (15 ounce size) coconut milk
1 cup water
1/2 cup uncooked rice
1/3 c maple syrup 
1 teaspoon vanilla extract Pinch of salt
1/8 teaspoon pumpkin pie spice Raisins, shredded coconut or nuts optional Put the can of coconut milk and water in a pot with rice and bring to a boil. Reduce heat. Add vanilla, maple syrup, salt, spice and raisins. Cover and simmer. Stirring occasionally for about 20-30 minutes until almost all liquid has absorbed. Let sit covered for 10 minutes and serve warm or chilled.
