AVGOLEMONO SOUP 🍋🇬🇷 MADE WITH CAULIFLOWER RICE 🍋🇬🇷Avgolemono soup is my Mom’s all-time favorite soup! Yesterday was her birthday, so I wanted to make a special recipe that brings her all the flavor she wants while helping her stick to her nutritional goals! If you have never had this soup, please give it a try. It's fantastic, easy, and perfect for meal prep! 🍋🇬🇷THE GOODS 4 cups- organic chicken stock @sprouts 
12 oz- frozen organic riced cauliflower @sprouts 
1 egg and 1 egg yolk @vitalfarms 
1/4- 1/2 cup fresh lemon juice
1 herbed organic rotisserie chicken (shred the chicken) @sprouts 1⁄4 cup chopped parsley Pink Himalayan salt and freshly ground pepper to taste 🍋🇬🇷THE RECIPE 1. In a large saucepan, bring your chicken stalk to a simmer and add your salt and pepper to taste. 2. Transfer 1 cup of the hot stock to your @nutribullet . Add 1/2 cup of the cauliflower rice, the egg, egg yolk, and the lemon juice and blend until smooth... Don't over blend. 3. Stir the blended ingredients into the soup and the chicken, and the remaining cauliflower rice (use the whole bag and simmer until thickened slightly, 10 minutes. 4. Stir in the parsley and garnish a little on top. Add a little fresh parsley each time you serve If you have any leftovers. Enjoy!👩‍🍳
