ππ₯ Today, I decided to take my leftover salmon salad and give it a glow-up! With the price of almost everything these days, utilizing all of your ingredients and leftovers with minimal waste is key. Although I could have gotten by with just the salmon, arugula, avocado, and minimal toppings, I looked to see how can I add more vegetables, fiber, and protein. A simple, small leftover turned into a satisfying meal that I hope will inspire others to enjoy their leftovers to the fullest!

Leftover Spiced Seared Salmon Salad @rebelrepublic.sh
1/2 cup organic black beans
1 cup organic shredded red cabbage
1/4 organic red bell pepper sliced
Evoo spray
Organic apple cider vinegar
To taste: ETBTB seasoning
ππ₯THE RECIPE
1. Pull out your leftovers or pan-sear a wild-caught piece of salmon and pair it with arugula. If you want this recreated, I will try searing my next piece of salmon with paprika and cayenne pepper to see if I get the same fantastic flavor.
2. Over medium heat, spray a little EVOO and add your red cabbage and bell peppers; add about a tablespoon of apple cider vinegar, and sprinkle with everything but the bagel seasoning.
3. Add to your bowl; using canned black beans, I heated them a little bit on the same pan and also heated the salmon
4. Add to your bowl, and if you are not dairy-free, add a little manchego cheese as this restaurant did and enjoy! π©βπ³
