It’s impossible to sum up the first two years of Edith’s, so this is a story from day 1. Two years ago today, we opened the doors to our Popup at Paulie Gee’s Pizzeria. It was raining, a lot. Pouring rain. I was sure no one was going to come to Greenpoint on a steamy morning to try out what we had been working on and although we had a great practice weekend, testing out our menu for friends & family, I figured it would be a slow morning. It was during the middle of the pandemic. As You know by now, I was wrong. I opened the big wooden doors to 60 Greenpoint Ave at 8:30 to see if the rain had stopped, it hadn’t. Instead, I saw a line of people down the block, holding their umbrellas, waiting for bagels. I yelled to the back of the kitchen that we had over 50 people in line and to get ready. 2 minutes till open I turned on the music. I took a deep breath. I hadn’t worked a register since my college days, but we had customers to serve. We opened up at 9, and I took my first order. The kitchen was immediately getting slammed- unlike the saying, it actually was our first rodeo all together. Me on the register and 3 Michelin-star chefs that were now cooking in the back of a dark pizzeria, on folding tables, using house lamps to light up their “stations”. Most of the light came from the roaring pizza oven. The flames climbed up the side as tamagoyaki pans were maneuvered around to get a perfectly fluffy Omelette. Who cooks eggs in live fire at 1000 degrees? We did. People waited for their food in the rain. I ran out cups of oj to try and make up for it. I forgot to put lids on the cups and the rain water dropped into the OJ all over my serving tray. My feet squished in my shoes from running food in the rain and as the kitchen screamed 86 bagels up to me at the register, I knew we had done something right. We are here in part, two years later because people didn’t mind waiting in the rain on that first day- thank you for your the continued support, we are proud to call North Brooklyn home!
