GREEK-INSPIRED EGG BITES🫒🍳 🫒🍳I am a HUGE fan of Greek food and decided I had to make a Greek-inspired egg muffin! I was thrilled with how these came out, and I loved having these on hand the rest of the week! The flavor is fantastic, and I know you will love this recipe as much as I do! After listening to the @glucosegoddess on the @thegeniuslifepodcast this morning, I felt so good about having this delicious savory breakfast. 🫒🍳THE GOODS (makes 12 muffins) 16 oz egg whites @traderjoes 1 organic red pepper 12 kalamata olives 4-5 cherry tomatoes sliced 1 tbsp kalamata olive juice 2 large handfuls of spinach chopped @traderjoes 3 large mushrooms- chopped 2 cloves freshly minced garlic To taste: Himalayan pink salt, organic black pepper, dried oregano 🫒🍳THE RECIPE 1. Preheat to 400 degrees. On a cookie sheet, add foil and the whole red pepper (sides only); bake for 10-15 minutes until roasted. Lower the temp to 350. 2. Spray a silicon muffin tin with avocado oil. ( I used a nonstick silicon pan and still sprayed it) 2. Sauté the spinach, mushroom, tomatoes, garlic, salt, pepper, and oregano in a little avocado spray. Turn off the heat and add the kalamata olive juice. 3. Now distribute veggies among the 4 cups and add about 3 tbsp of egg white to each; top each one with a sliced olive 4. Bake for 15-20 minutes, I'm new to using my apartment's oven, and 15 minutes was more than enough! Remove and let cool a few minutes. Enjoy! 👩‍🍳
