Chickpea balsamic and strawberry salad
(trust me on this one, straws and balsamic = chefs kiss)
Ingredients :
- 1 can chickpeas
- 1 tsp paprika
- 1 tsp cumin
- salt and pepper
- 1/2 cup raw quinoa
- 2 handfuls kale
- 2 handfuls rocket
- 1/2 a large cucumber
- 4 medium size tomatoes
- 1/2 a red onion
- handful of strawberries
Dressing:
- 3 tbsp balsamic
- 2 tbsp olive oil
- 2 limes
How to:
- Cook quinoa for 15 minutes over medium heat until fluffy. Drain and rinse then leave to cool.
- Open can of chickpeas, drain excess liquid, rinse under cold water and then place on paper towel to pat some of the excess liquid away. Place on to a parchment lined tray and drizzle over olive oil. Add spices - paprika, cumin, salt and pepper. Coat evenly and then place into oven at 180 degrees for 20 minutes to crisp up.
- Wash kale and rocket and then shake off excess water and place into a bowl .
- Chop veggies for salad - cucumber, tomatoes, red onion and strawberries.
- Make dressing - add balsamic vinegar, olive oil and lime juice to a bowl and whisk.
-Add everything together into a big bowl, pour over the dressing and give a good mix through and serve!
