Shrimp in a Rhubarb Ginger Sauce With Dandelion Greens and Red Scallions
Ingredients
- 1 lb Shrimp
- 1 Bunch Dandelion Greens
- 4 Cloves of Garlic, Minced and Divided
- 3 Sprigs of Red Scallion, Sliced
- 2 -3 Stalks of Rhubarb, Sliced
- 2 Tbsp Fresh Ginger, Minced
- 1 Tbsp Honey
- 1/4 Cup Water
- 1 Tbsp Organic Grass-fed Butter or @montysnyc Plant-Based Butter
- 1/4 Tsp Sea Salt
- 1/4 Tsp Red Pepper Flakes
Directions
1. In a sauce pot, add the chopped rhubarb, ginger, honey, butter, salt, chili pepper, water and 1/2 the garlic. Bring mixture to a boil, then reduce to a simmer. Mash the rhubarb with the back of a wooden spoon or whisk. Continue to stir occasionally for about 10 minutes until forms a thick sauce.
2. While sauce is simmering heat a small frying pan with olive oil. Sauté the garlic, red scallion and dandelion greens. Then set aside.
3. In the same pan add the shrimp. Cook for about 5-8 minutes until pink. Once the shrimp is cooked through add the rhubarb sauce. Mix to evenly coat the shrimp.
4. Plate shrimp over the garlic greens. Serve hot!
