I’ll be making this salad all summer long!
Feel free to use whatever you find at your local farmers market. You can replace the peaches with strawberries, add some fresh burrata or goat cheese or sliced almonds or sunflower seeds.
Farmers Market Salad
Serves 4-6
1 Container of Arugula
1 Container of Spring Greens
1 Bunch of Snap Peas
1 Cucumber
4 Peaches
1 Bunch Fresh Basil
1/4 Cup Olive Oil
2 Tbsp Balsamic Vinegar
1 Tbsp Honey
1 Tbsp Dijon Mustard
Directions
1. Bring a pot of water to a boil. Blanch the snap peas in the water for 1 minute. Then place in an ice bath. Set aside to dry.
2. Wash and dry greens. Place in a large salad bowl.
3. Chop cucumber and peaches into bite sized pieces. Add blanched snap peas and chopped veggies to salad.
4.Julienne basil and mix into salad.
5. mix dressing ingredients until fully emulsified.
6. Mix together and enjoy!
