Ingredients •3 boneless, skinless chicken breasts •1 cup cottage cheese (@good culture ofc) •1 tbsp onion powder •1 tsp salt •1 (19 oz) can mild enchilada sauce, divided •1 (10 oz) can mild enchilada sauce •6 flour tortillas •1 to 2 cups shredded mild cheddar cheese Instructions 1. Bring a pot of water to a boil. Add chicken breasts and boil for about 25 minutes until fully cooked. 2. Drain all water, then shred the chicken directly in the pot using an electric hand mixer. This takes about 30 seconds. Two forks also work. 3. Transfer shredded chicken to a bowl. Add cottage cheese, onion powder, salt, and 8 oz of the 19 oz enchilada sauce. Mix well. 4. Spoon about 1 cup of the chicken mixture onto each tortilla and roll into enchiladas. This makes about 6. 5. Pour the remaining 8 oz of the 19 oz enchilada sauce into the bottom of a 9x13 baking dish to coat. 6. Place enchiladas seam-side down in the dish. 7. Pour the entire 10 oz can of enchilada sauce evenly over the top. 8. Sprinkle 1 to 2 cups shredded cheddar cheese over everything. 9. Bake at 375°F for 25 to 30 minutes, until bubbly and the cheese is melted. 10. Let cool slightly and serve. Serve with sour cream, fresh avocado, and cilantro rice.
