Sumac cauliflower, tahini and pomegranate summer salad. Ingredients: - 1 small cauliflower - drizzle olive oil - 2 tbsp sumac - salt and pepper - 1 cup rocket / mixed salad - 1/2 red onion - 2 tomatoes - 1/2 cucumber - 1/2 cup pomegranate seeds Dressing : - 2 tbsp tahini - 2 tbsp hummus - 1 tbsp apple cider vinegar - 3 tbsp water - to thin - salt and pepper How to: - Wash and de - leaf cauliflower. Use a knife to chop into florets and place on parchment lined baking tray. - Drizzle with olive oil and season with sumac. salt and pepper. Place in the oven for 20-30 minutes at 180 degrees. - To make salad, wash salad and rocket and place into a bowl. Chop your veggies, cucumber and red onion and place into bowl. - make dressing whilst cauliflower is cooking so combine all dressing ingredients to a bowl and mix together until smooth. Add more water to thin out if too thick. - Place cooked cauliflower on top of salad, pour over tahini dressing and top with fresh pomegranate seeds! Enjoy x
