🥓 BACON AND BRUSSELS SPROUTS 🥦
December is the month where you’ll find brussels sprouts everywhere, especially in the US. (It isn’t as big a thing over here in Asia.) I have to admit though, when I first tasted them, I wasn’t a big fan at all... Until I learnt how to make it the right way! All it takes is to cook it in super salty, rapidly boiling water for exactly 4 minutes, then serve it with bacon bits and a generous swipe of bacon mayo! You might think it’s the bacon that makes the dish here, but trust me, the brussels sprouts really hold their own, and might just change your mind about this bulbous brassica! 💁🏻♂️
Here's what you need to make it:
400-500g (1 lb.) brussels sprouts
3-4L (~1 gallon) water
120g salt
60ml (1/4 cup) olive oil
juice of 1/2 a lemon
3g (1/2 tsp) salt
freshly ground black pepper
8 strips of smoky bacon
*Bacon mayo*
1 egg yolk
10g (2 tsp) mustard
10ml (2 tsp) lemon juice
1g (1/4 tsp) salt
180ml (3/4 cup) vegetable oil
3 pinches smoked paprika
