Another day, another lil MEZCLA recipe vid for you. This time it's Chicken with pineapple and nduja, and I would highly recommend you pair it with the Brown butter curried cornbread for the ultimate snack. I call for chicken stock in the recipe but if I could go back in time I would tell you to use pineapple juice instead. Not afraid to admit when things could improve and whilst this dish is really very delicious as is, it's eeeven better with pineapple juice instead of stock. Find the recipe on p. 112 of MEZCLA. .
