Lemongrass Cilantro Lamb Chops
6 lamb chops
4 tablespoons olive oil
2 garlic cloves minced
1โ4 cup Worcestershire sauce
2 teaspoon fish sauce
2 teaspoons Ground chinese five spice
1 teaspoon mustard powder
1โ2 teaspoon roasted cumin
1โ2 teaspoon turmeric
2 teaspoon smoked paprika
Optional Garnish
Dill
Cilantro
mint
Lemongrass cilantro sauce
1 bunch fresh cilantro
2 stalk lemongrass
1 tablespoon fresh ginger grated
3 garlic cloves
1โ3 cup rice vinegar
1โ3 cup water
1โ2 tablespoon sambal oelek
1 teaspoon kosher salt or to taste
1โ4 cup olive oil or more as needed.
1. To make marinade add all ingredients except for lamb to a bowl and mix well.
2. Season Lamb chops generously with coarse salt and black pepper; Next pour the marinade over the lamb chops and turn them to ensure they are well coated. Marinade chops for 30 minutes or longer in the refrigerator.
3. While the lamb chops are marinating, prepare your Lemongrass cilantro sauce, place all ingredients in a food processor except for oil with the motor running, drizzle in 1/4 cup olive oil in a thin stream and process until smooth and emulsified. Set aside
4. Once the lamb are marinated, preheat a cast iron grill pan for 5 minutes, until the pan is extra hot. Reduce the flame to medium and add the lamb chops. Cook chops for 2-3 minutes per side, more for thicker pieces. * this is for medium temp lamb chop* Remove the lamb from the pan and let the meat rest for 5 minutes before serving with lemongrass cilantro sauce, topped with fresh herb mix. After searing you can always finish lamb in the oven to your preferred doneness! Enjoy
