🍊 STICKY MANDARIN PUDDING 🍊 I got a ton of leftover mandarin oranges from the Lunar New Year celebrations (as is always the case every year without fail). But this year, before they all spoil and go to the compost, I turned them into a sticky toffee pudding-inspired dessert! 🍮😁🍮 And MY GOD they were SO dang good! 🤯 Moist and silky, with a deep smoky caramel from the gula melaka, all with an underlying sweet scent of citrus! 🍊 Here's what you need to make it: 3-4 (400g) mandarin oranges 60g (1/4 cup) unsalted butter 80g (1/3 cup) sugar 1g (1/4 tsp) salt 2 eggs 5g (1 tsp) vanilla extract, optional 180g (1 1/2 cup) all-purpose flour 4g (1 tsp) baking powder 1g (1/4 tsp) baking soda *For the sauce* 200g (1 cup) gula melaka or brown sugar 100g (1/2 cup) unsalted butter 180g (3/4 cup) heavy cream (plus 3 tbsps for garnishing) *Directions* As for the directions, start by peeling and deseeding the mandarins, blend them up until smooth then simmer on low heat for 20 minutes, until it's spoon-clinging thick. Cream up the butter and sugar, then add in the salt, mandarin paste, eggs, and vanilla extract. Fold in the dry ingredients until no dry streaks of flour remain, then pour the batter into buttered molds to bake in a 180°C (350°F) oven for 20 minutes. Take them out of the oven when done, and let them cool in the molds. For the gula melaka caramel, simmer the gula melaka, butter, and heavy cream in a pot for 30 minutes. When both are done, pour a few spoonfuls of sauce on a tray, unmold the cakes onto the tray, then pour the rest of the sauce on top.
