Most nights, I need to get in and out of the kitchen quick, and this 30 minute salmon recipe gets the job done!
It comes out so flavorful and juicy and I served it with parmesan asparagus and tomatoes (which are optional but I needed to use them and loved the touch of color they added.). It all baked together on one pan and I served it over rice. Potatoes or pasta would be great with it too.
HOW TO MAKE DIJON GARLIC AND HERB SALMON + PARMESAN ASPARAGUS
Preheat oven to 400°F. If you’re serving with rice, and don’t have any already on hand, start that now.
Trim asparagus and halve or quarter cherry tomatoes. Toss with olive oil, salt, pepper, 1 Tbsp McCormick rotisserie chicken seasoning, juice of ½ lemon, and freshly grated Parmesan, how much parm is your business 😉.
Melt 2-3 tbsp butter and stir in 1 tsp Dijon mustard, 1 tsp garlic powder, 1 tsp onion powder, 1 Tbsp garlic & herb seasoning (I used Aldi), 1 tsp paprika, plus salt and pepper to taste. TASTE IT FOR SALT - this is what will season your salmon, so adjust accordingly.
Slice the remaining 1½ lemons into rounds. Lay on sheet pan, place salmon filets on top, and rub generously with butter marinade.
Add asparagus and tomatoes to the pan. Roast for 12 minutes at 400°F, then broil 2–3 minutes until salmon is golden and veggies are done, asparagus should still have a slight bite.
Then I plated it up and called my babies to come eat! 🤎
