π FRIED ENOKI MUSHROOMS π
I have a soft spot for deep-fried foods, and my latest deep-fried obsession is with these enoki mushrooms! I coated it in a light batter, gave them a brief bath in hot oil, crisping up their delicate tendrils and meaty stem for a shatteringly crunchy snack. π€€

Here's what you need to make it:
227g (8 oz) enoki mushrooms
60g (1/2 cup) all-purpose flour
40g (5 tbsp) cornstarch
2g (1/2 tsp) baking powder
3g (1/2 tsp) kosher salt
1/4 tsp white pepper
1/4 tsp garlic powder
Vegetable oil, for deep-frying
3g (1/2 tsp) fine sea salt
Ketchup, Japanese mayo, or your favourite condiment (optional)
*Mala Spice Seasoning*
1 tbsp Sichuan peppercorns
1 tsp sweet paprika
1 tsp cumin seeds
1 tsp coriander seeds
