Let’s normalize a cozy New Year’s Eve with an excellent dish, red wine, and your favorite people. 💫
How to 👇
Duck:
- Score our magret duck breast and season with salt and pepper
- Cook in a pan on low heat, rendering the fat until golden brown
- Add a knob of butter, sage and rosemary
- Baste and cook 2-3 minutes more (to your liking!)
Sauce:
- Sauté chopped red hot chili peppers (like the band 🌶️ )
- Add our duck and veal demi-glace
- Reduce in half
- Add one glass of red wine
- Reduce in half
- Strain the sauce and add it back to the pan with some butter to thicken
Serve with potato purée and a generous glass of red wine. Cheers! 🍷
