Sauté peppers and mushrooms in olive oil, garlic (& onions if you’re into that sort of thing). Add cooked sausage (I use HOT) but if not, add a dash of cayenne pepper. You can also leave the meat out to make this a veggie heavy casserole! Add a small handful of spinach or greens. Salt and pepper and let all combine/ cook down together. Transfer to a prepared baking dish. Let cool while you shred 1/3 cup of cheese of choice. In a bowl, whisk together half a dozen eggs and 1/4 cup milk. Add most of your shredded cheese as the next layer to your casserole, leaving a little to sprinkle on top. Add a little salt and pepper. Then pour your egg mixture evenly on top. Again, add a little salt and pepper. Then sprinkle with remaining cheese. Salt/ pepper to taste. Bake for about 40 minutes or until edges are looking crispy!
