Summer is a prolific time in our kitchen. Lots of stellar local produce coming in that keeps us busy with testing out new flavor combinations for potential future recipes. You’ll never see a fruit extract on our label, we process whole fruit and make purées. It takes more time but it’s worth it, so you can enjoy the actual flavor of the fruit in our Delights.
We’ve also been busy cooking for restocks - mulberries came in from @froghollowfarm for Deep Sleep and it smelled like a waffle house in the kitchen for a few days.
Chef Joey + team are working with new ingredients sourced from Watsonville, Big Sur, Brooklyn, beyond. Also, coming soon: A new recipe that uses produce and flower grown by Wendy (Director of Cultivation) and her son Lonnie at our farm in Penn Valley. Weather report out there is that it’s hot hot hot, but the plants are thriving and the flower growing tall. Next month harvest begins.
