Blackberry chia crumble slice 🫐🍒🥧 Ingredients : Chia compote: 2 cups frozen fruits - dark forest fruits - blackcurrants, blackberries, dark cherries 6 tbsp chia seeds water to thin if needed Oat base: 1/2 cup oats 1 cup oat flour 1/2 cup desiccated coconut 1/2 cup pumpkin seeds 1/2 cup coconut oil 1/3 cup honey 1 -2 tbsp cinnamon 1 tbsp vanilla extract Crumble topping: 1/2 cup oats 1/2 cup ground almonds 3 tbsp date / agave / honey / maple syrup 1 tbsp cinnamon 1/4 cup coconut oil How to : Start by cooking down the frozen fruits in a small saucepan on a low - medium heat until a smooth consistency and a bubbling heat. Take off the heat and add in the chia seeds and stir until the fruits start to thicken - add water if it has become too thick as you want it to easily spread. Add all of the base ingredients to a bowl and mix together. Pour into a parchment paper lined baking tray and evenly distribute. Press down with a parchment sheet on top to get an even and smooth layer. Place into the oven for 20 minutes on 185 degrees. Prep the crumble topping by adding all ingredients to a bowl and place to the side. Take out the baked base from the oven and let cool. Spread out the chia jam on the base and evenly sprinkle out the crumble topping. Place back in the oven for another 10-15 minutes until golden. Let cool for 15-20 minutes. Then slice into squares and serve hot or cold as a delicious evening desert, midday snack or breakfast the next day. Enjoy xo
