Another JBS Bowl/Salad to share. I often get so many messages when I have shared these in my stories so I am going to continue sharing in my feed as well.
Just a recap I believe:
- A bowl is just an untossed salad but looks prettier for IG.
- Anything can be a bowl/salad but it should have at least three ingredients and should include different textures for interest.
- Making a salad a meal by including a good source of protein
- Cheaping out on the dressing is a bad move. Coat it, baby,. and enjoy!
I often prep these bowls/salads so that I can make about four portions to last over a couple of days. This encourages healthy eating when staring into the abyss of your fridge. This prep includes cooking/roasting and chopping. I then store the ingredients in individual containers in the fridge so they are ready to rock. Keeping them separate also means no sogginess, etc.
This beauty of a bowl (soon to be salad) seen here includes: baby spinach, roasted sweet potato, baked tofu (tossed in EVOO, corn starch & smoked paprika), roasted cauliflower (with za'atar), cherry tomatoes and raw walnuts. The dressing is a dreamy Lemon-Tahini-Tumeric one - Just look at that colour! There are plenty of recipes for the dressing on the www or if you would like me to share mine, let me know.
