It’s still summer time so that means we’re still grilling! My type of Kabob is definitely this Grilled Curry Shrimp Kabob - Juicy shrimp marinated in lots of aromatic spices, with fresh vegetables and ripe plantains these are really easy to make super flavorful & vibrant! Full recipe below 🫶🏾
Ingredients
2 lb. Shrimp
1 pint container Cherry tomatoes
2 Ripe plantain cut into 1/4-inch-thick slices
3 bell peppers (mixed colors)
1 Red onion large dice
1 teaspoon Roasted cumin
1 1⁄2 tablespoon Lalah’s Curry powder (this is my preference you can use your choice of curry powder)
3 garlic cloves grated
1 Thai chili pepper chopped
1 teaspoon fresh ginger grated
1 teaspoon Black pepper
1 1/2 teaspoon Salt
1⁄4 cup Olive oil
Fresh thyme for garnish
Instructions
1. Soak Skewers for about 15-20 minutes, to prevent burning.
2. Heat the Gas grill to medium/high heat and oil grates.
3. In a large bowl add cleaned peeled and deveined shrimp season with roasted cumin, Lalah’s curry powder, garlic, ginger, Thai chili pepper, olive oil, salt, black pepper, mix well and let marinate for 1 hour or longer.
4. Thread the shrimp onto the skewers, alternating between the shrimp, tomatoes, bell peppers, red onion, and plantain. Make sure the front of the skewer is covered with vegetables or shrimp.
5. Place the skewers on a grill and cook each side for 5 minutes. Make sure to spray kabobs with olive oil before placing them on a hot grill.
6. Once finished garnish with thyme and enjoy them while they’re fresh off the grill!
