Toddler approved ๐๐ผ Ingredients: 3 Tbsp avocado oil 1.5 to 2 lbs salmon cut into filets Sea salt to taste Black pepper 5 cloves garlic minced 1 15-ounce can full-fat coconut milk 2โ3 cup sun-dried tomatoes chopped 1โ2 tsp paprika (optional) 2 cups baby spinach (optional) Instructions: - Sprinkle the salmon filets with sea salt and heat the avocado oil in a large skillet - Place the salmon in the hot pan flesh side down and sear for 5 minutes on each side. - Remove the salmon and add the onion, garlic and sundried tomatoes. Sauteฬ for a minute or two, until it is very fragrant. - Add the coconut milk, (rice vinegar optional), sun-dried tomatoes, and paprika to the skillet and stir well. Allow the sauce to cook at a full boil. - Add the baby spinach and continue cooking until the spinach has wilted. - Transfer the salmon back to the skillet and spoon the sauce over the salmon.
