Soup season is here and I’m so happy about it. There’s nothing better than a hot soup to warm up your heart, belly and soul. Starting this season with a favorite of mine; broccoli soup. Servings: 6 Time: 35 minutes Ingredients: 2 large broccoli bunches (8 cups florets) 1 large white onion 2 medium size white potatoes 3 cups vegetable broth 1 cup oat milk 1/4 cup olive oil 2 tsp dried Oregano 2 tsp dried thyme 1 tsp chili flakes 5 garlic cloves 1 tbsp sea salt 1 tbsp pepper Toppings: 2 Green onions 1/3 cup sliced almonds Recipe: Start by parting your broccoli bunch into florets and put aside. Roughly chop your white onion in cubes. Peel and cube white potatoes. In a large pot, bring to medium heat 1/4 cup of olive oil. Add your white onion and potatoes. When olive oil, onion and potatoes start to sizzle, add dried oregano, thyme and chili flakes. Add your salt and pepper. Mix until everything is coated with spices. Add your broccoli florets. Mix again. Add your vegetable broth and oat milk. Mix everything and bring mixture to a boil. Once mixture is boiling turn your heat down to simmer for 20 minutes. After approximately 20 minutes, your broccoli and potatoes should be soft. Blend your mixture with an immersion blender or transfer to a heat resistant blender until you get a creamy consistency. Transfer to a smaller bowl and add your chopped green onions, sliced almonds and a drizzle of olive as toppings, and serve! Bon appétit!
